1. Twice Baked Potato with Egg

Spread the spinach mixture on the toast. Top each with slices of the salmon. Prepare water for eggs. Add the vinegar to the simmering water. Crack an egg into a cup, then pour it into the water. Simmer until the whites are set. Remove with a spoon and place on a plate or paper towels. Trim away the ragged white pieces. Place an egg on top of the salmon toast. Dress with vinegar and herbs.
