When I think of summer, I immediately think of strawberries. Yes, these days they tend to be available year round but in the summer they’re in season which means they’re extra sweet, extra fresh and extra juicy. It’s the best time to add them into your breakfast, lunch, dinner, dessert, just add them to everything and then eat some extra ones on the side. 1. Strawberry Mousse
I hear the word mousse and I’m already interested, add strawberries to it and it’s my dream food. This particular recipe takes less than 10 minutes to make. Whip the heavy cream until it forms soft peaks and put it in the fridge to chill a little. Take the rest of the ingredients and mix them in the blender until smooth. Now fold the mixture in with the whipped cream and chill before serving. It’s that easy.

3. Homemade Strawberry Poptarts
Store bought pop tarts are a favorite treat amongst many. It reminds you of childhood and it’s full of sugar, so we see the appeal. However, these homemade ones are even better. All you have to do is to combine flour, sugar, salt, butter, shortening in the food processor until it forms a coarse meal and then add water and process until it just starts to hold together. Divide into 2 parts and refrigerate for half an hour. In the meantime make the filling by combining cold water with cornstarch, add the jam and simmer until it thickens a bit. Roll out the dough, cut it up into equal pop tart shapes, add the filling, use the egg wash to stick the two sides together and brush some egg wash on top too. Bake for 30 minutes at 350F. - 8 tablespoons cold unsalted butter, cut into 1/2″ pieces (1 stick)

- 1 large egg mixed with 2 tablespoons milk (eggwash to brush over the edges and top)

4. Strawberry Angel Food Lush
There’s a reason this is called angel food. It’s absolutely delicious and it’s actually easy to make. You just need some premade angel food cake, cut it into serving size squares and line a pan with it. Then make the cream cheese layer by blending it with powdered sugar and some milk. Spread over the cake. Then whip the heavy cream with some powdered sugar and vanilla extract until it forms peaks, layer on top. And finally mix the strawberries with glaze and layer on top. Here’s the easiest strawberry pie recipe you’ll ever read yet it’s absolutely scrumptious. We know you don’t always want to mess around with pie crusts, so just get a premade one and bake it according to instructions. To make the filling combine sugar and water and stir on medium heat until it dissolves, ass the cornstarch and keep whisking until the mixture turns somewhat clear, make sure there are no lumps. Remove from heat and mix in the jello until it dissolves, and finally add the strawberries. Let it cool and pour into the pie crust. Refrigerate for a couple of hours.
